It is located in historic downtown Meridian and opened December 21, 2007. The new restaurant features ample seating and a conference room.

History:
January 13, 2004 (Eagle, Idaho) Eagle Rib Shack opened on January 7, 2004. The restaurant, located at #360 East State Street in historic downtown Eagle, showcases barbecue styles from around the country. Owner, Andrew Petrehn, entered and won the 2003 “Thrill-of-the-Grill” Barbecue contest last year and has spent the last five months remodeling the building in preparation for the restaurant opening. Petrehn, encouraged by his friends and family, entered the barbecue contest as an amateur under the condition that he start a restaurant if he won. The first place Tri-tip roast and Kobe beef ribs are on the menu, as well as pork baby back and spare ribs. Meat from other animals such as lamb, bison, duck, turkey and chicken are regular menu items. Monthly specials include exotic meats from alligator, elk, ostrich, salmon and others. Side dishes include mouth-watering baked beans and a loaded barbecued baked potato. The restaurant is primarily carry out, with some seating, and is able to accommodate large orders for tailgate parties and special events. A patio expansion for outdoor seating will be taking place this spring.

Petrehn is a barbecue connoisseur, stating “Barbecue; it’s not how you spell it, but how you make it. We don’t use gas to cook our foods, or throw our meat on a grill and claim its barbecue. We use time, spices and a touch of smoke to create an award winning barbecue, the way it should be!” Orders can be placed ahead of time by phone, fax or online at http://www.eagleribshack.com.

The newly renovated interior blends turn of the century charm with an upscale flair. Walls showcase photographs of authentic chuck wagons, cattle drives and barbeques. The restaurant takes advantage of the Oregon Trail history, encompassing its smoker in a life sized replica of a Conestoga wagon, similar to those traveling through the area 100 years ago. Earthy shades of sage, brick and goldenrod create an inviting setting accentuated by rustic décor. Petrehn has spent months meticulously transforming the historic building, which was once a dairy outbuilding, into a showpiece highlighting the business potential available in the town’s historic district.
